THE BLUE KITCHEN'S MEMORABLE MERIENDA

Mariposa with Scrambled Eggs, Topped with a Selection of Smoked Tanigue Spread, Quattro Crema, and Crispy Bacolod Chorizo

Instead of plain old crackers, surprise your guests with the elegant biscuit mariposa as the background to these interesting toppings!

To make perfect scrambled eggs, heat 2 Tbsp good butter in a nonstick skillet over very low fire. When the foam subsides, add:

4 large eggs. beaten
1/4 cup heavy cream
1 tsp. rock salt
1/4 C chopped Blue Kitchen Pure Carabao’s Milk Kesong Puti

Stir carefully and constantly with a wooden spatula. Just before the eggs are about to set, remove the skillet from the fire. The eggs will cook to perfection in the remaining heat.

Cool the eggs a little, then carefully spoon over the mariposa and finish with the above suggested toppings.
